Bistrot Chez Rémy opened last summer at Walt Disney Studios Park. It is a new table service venue, a true tribute to the movie “Ratatouille” and of course to French gastronomy. A new venue also means new teams, new products, a new menu, and new clients to satisfy. This is the challenge Ludovic Mallac, the new chef, meets every day. This lover of good cuisine takes us backstage for a visit.
A great, curious chef, with an enriching, flavour-filled career
To Ludovic, cooking is a love story and a family tradition. The son and grandson of a cook and a restaurant owner, respectively, he fell into the cauldron at a very tender age. He started as an apprentice and climbed the various echelons, from the California Grill at Disneyland® Paris to the Monsieur Paul restaurant at Walt Disney World Resort. He then took the path back home to France, at the restaurant Inventions (Disneyland® Hotel), at Disney’s Newport Bay Club® as well as at Walt’s – an American Restaurant.
Just recently Ludovic took the helm at Bistrot Chez Rémy. This 32-year old, a native from the island of Réunion, was ready to face his first opening. “To participate to the opening of a new restaurant is a remarkable experience. Everything is new, everything needs to be created.”This is an adventure he shared with 25 cooks and some one hundred waiters.
While cooking is his passion he never loses sight of his first objective which is the guest’s satisfaction. If you eat at Bistrot Chez Rémy, keep your eyes open for he is never too far away: “I always go meet the guests, to make sure their experience met their expectations.”
